few steps in pig-slaughtering

1st - choose a pig. We made it by the FIFO system...first in first out

but the pig wasn't very willing to get in. Help handed over.

cleaning the area

2nd - weight it. This one had 210kg...still prety calm here...

any last words? nope...ok

3rd - kill the pig...with as little stress as possible...a stressed pig doesn't taste that good

4th - cutting the artery and colleting the blood...very essential for many good meals...or atleast one

holding the back leg is very..very good idea. even if a pig is dead, it can kick you very hard...and you wouldn't like to be kicked by a dead animal, would you?

blood collected...sure they lost few drops of the live giving liquid

5th - if you don't kill your pig at place of portioning, you need to take it there as soon as possible

at this time it still weighed over 200kg...it was not that easy to put him up there in the car...

after a 20 min. ride, we arrived at the place of deconstruction. the pig's still there...surprisingly

it is a little dirty...I bet you wouldn't eat this meat...

6th - prepare a lot of hot...very hot...water and clean the pig

and by cleaning I mean it has to be really clean...shaved clean

the hot water is very heplfull at this point

some tools for the 6th step...

be carefull to not to cut the skin...it wouldn't look nice on bacon

a pedicure for pigs...not something you would like to try...

7th - hang the pig...I don't know what tendon is that, but any other couln't hold the full weight of the pigs body

still dirty..more cleaning on the way...

such as fire-shaving, washing and parching

8th - the last step from me..I don't know more details of pig-slaghtering, but simply..cut in in pieces

it does look like a zip

how many of you could put a hand in the dead pig?

bowels birth :)

cutting out the..oh well..the anus

taking a photo...these phones have pretty good cameras these days..

cutting the lungs and other stuff...wonder where's blood from...

"you broke my heart" :)

backbone is really a hard bone

nevertheless...saw vs bones 1:0

a slaughterers portrait

aaaand the final cut

a spinal cord...good for some meal...but don't ask me what one...I really don't know and even don't want to know

and this is going to be a fine ham...hmmm, looking forward to it...

yummi, yummi :)

cleaning the head...everything had to be cleaned

uhm, eyes are not to eat, they had to go away

and this is going to be a bacon..

home made...bacon...not like those from hypermarkets...I know..it doesn't look like a bacon yet...

sweet soup isn't it?

the Core (of a pig ofcourse)

ribs...cutting the mess around to be nice and ready to roast

and finally...cutting the bacon

to pieces like these, hang them, smoke them and magic is done...they are ready to be eaten

and this is fat..pure fat...for the greaves

sadly..I didn't feel very well that day, so there are no more photos...but someday I will bring you some interesting shots of "making the meat-sausage"

until next time
